Korean Cowgirl is replacing Chiquito in Ashford’s Eureka Park this spring! Expect something special in the completely made-over space.
Korean Cowgirl is the new place, with existing spots in Canterbury, found at Riverside and Cave Hotel. The opening date is Friday, April 18 – Good Friday, actually.
The plan to fill the space began in October, positioning it between Nando’s and Subway. Ashford Council granted them the alcohol license, and then, work transforming the place commenced. Chiquito closed during the pandemic.
Korean Cowgirl believes Ashford needs something new and wants their place to be special. Eureka Park welcomes strong brands, boasting a cinema, hotels, and free parking. Access is easy here, and work started Monday.
They removed everything from the Chiquito space, initiating a complete makeover. There’s lots to do after it sat empty for so long, and they will add signs before they open on Good Friday.
The old Chiquito sat empty for years, since the Mexican chain closed. It will now get a fresh start. The Restaurant Group owned Chiquito, closing many branches after the pandemic.
They took down signs in Ashford back in 2020, leaving only a sombrero inside its windows. Before Chiquito, it was the M20 nightclub, which closed down in 2005.
